Alvear Fino CB NV rey-del-mundo On the palateThis classic dry fino made from Pedro Ximnez (not Palomino) is wholely unfortified, unlike the Finos from Jerez. Made following the traditional Solera barrel system, aged in the cask under a veil of natural yeast known as the "flor. Reminiscent of toasted almonds and olive brine, Alvear Fino CB is a delicate wine with pale straw colour, delicate floral character, salty, clean and refreshing. It is one of the rare wines which will happily partner
