Benoit Doussot, a Burgundy trained winemaker, teamed with Bertrand Gautherot of Vouette et Sorbee to prove it, farming organically around the village of Buxieres sur Arce. Boreal is 100% Pinot Noir made as a white wine, pressed direct, fermented and aged with native yeasts in used oak, and
